【中文摘要】 作者對(duì)6 株人工栽培的金針菇進(jìn)行了蛋白質(zhì)及氨基酸含量的測(cè)定與分析, 發(fā)現(xiàn)金針菇傘的營(yíng)養(yǎng)價(jià)值僅占整個(gè)菌株的1/3 。在整體營(yíng)養(yǎng)價(jià)值上, 金針菇的氨基酸含量全面, 且必需氨基酸含量較高, 已測(cè)的7 種占氨基酸總量的48-23% , 尤其是苯丙氨酸含量較高, 是一種較理想的營(yíng)養(yǎng)保健食品。在供試的6 個(gè)菌株中, 89—6 菌株的蛋白質(zhì)及氨基酸含量均為最高, 人工栽培時(shí), 是一個(gè)值得推廣的較優(yōu)良品種。

【英文摘要】 The content of protein and amino acid in Flammulina velutipes was tested using six artificial cultivated Flammulina velutipes.The investigation shows that the nutrition value lies in the cup of Flammulina velutipes accounts for 1/3.On the whole nutrition value,the amino acid content in the Flammulina velutipes is comprehensive,even more necessary amino acid content is rather high.The tested content of seven varieties make up 48 23% of the whole amino acid content, espcially Phe content is high,it is an ideal nutritious health protection.Among six supplied vaccines,89—6 is the highest in protein and amino acid content, it is a fine popularizable variety.
